Cotoletta Milanese


Ingredients

  • Boneless chicken breast

  • 2 eggs

  • 100 g flour

  • 200 g breadcrumbs

  • 300 g butter

  • 80g grated parmesan cheese

  • Parsley

  • salt to taste

Serve the cotoletta milanese with a Bean and pepper salad

  • Beans

  • Red Peppers

  • Onions

  • Courgettes

  • Oil

  • Lemon

  • Salt & Pepper


1.Whisk the eggs in a bowl and season with salt.

2.Pass each cotoletta in the flour, then in the eggs, then in the breadcrumbs with parmesan pressing with your hands to make the mix adhere to the cotolette as much as possible.

3. Melt the clarified butter in a frying pan over high heat. Fry the cotolette for about 4 minutes each side until they become golden brown
